Ingredients:

1 lb. boneless, skinless chicken breasts, cut into cubes

1/2 lb. boneless, skinless duck breasts, cut into cubes

1 onion, chopped

3 cloves garlic, minced

4 carrots, peeled and sliced into thin coins

2 potatoes, peeled and diced into small cubes

1 bay leaf

2 cups chicken broth or stock 1/2 cup red wine (optional) 1 teaspoon dried thyme leaves Sea salt and freshly ground black pepper to taste 1/4 cup chopped fresh parsley leaves for garnish (optional)

Instructions:

In a large soup pot or Dutch oven over medium heat, combine the chicken, duck, onion, garlic, carrots, potatoes, bay leaf, chicken broth or stock, red wine (if using), thyme leaves, salt and black pepper. Bring to a gentle simmer and cook for about 30 minutes until the chicken and duck are cooked through. Discard the bay leaf.        If desired, use an immersion blender to blend some of the vegetables into the stew for a thicker consistency. Or mash some of the potato cubes with a fork to thicken it further. Ladle the stew into bowls and garnish with fresh parsley leaves if desired before serving. Enjoy!
