Ingredients:

1 whole organic chicken, cut into 8 pieces

1 organic duck, cut into 8 pieces

1/2 teaspoon each salt, pepper, smoked paprika, dried oregano flakes

2 tablespoons olive oil or avocado oil, divided

1 cup chicken broth or bone broth

1 large onion, chopped "3 cloves garlic, minced 2 large carrots, peeled and sliced into thin coins 2 stalks celery, diced (optional) 1 red bell pepper, diced 1 28-ounce can diced tomatoes with juices Sea salt and freshly ground black pepper to taste

Instructions:

In a large bowl or a resealable bag, combine the chicken pieces, duck pieces, salt, pepper, smoked paprika, and oregano. Toss well to coat. Heat the oil in a large pot over medium heat. Add the chicken and duck and cook until browned on all sides. Remove from the pot and set aside. Add the onion to the pot and cook until translucent. Add the garlic and cook for an additional minute. Stir in the carrots, celery (if using), bell pepper, tomatoes with their juices, chicken broth or bone broth ,and reserved chicken and duck. Bring to a simmer. Cover and cook for 30 minutes. Season with salt and black pepper to taste before serving hot over cooked white rice or quinoa

Bring to a simmer and cook for 30 minutes. 5) In a small saucepan over medium heat melt butter. Stir in flour until well combined. Gradually whisk in milk until mixture is smooth. Bring to a boil then reduce heat to low and simmer for 2 minutes whisking constantly. 6) Stir in butter mixture into the stew along with peas. Simmer for an additional 5 minutes or until heated through. Discard bay leaf before serving. Garnish with fresh parsley leaves if desired
