Cook until the chicken and duck are cooked through and the rice is tender, about 30 minutes. 3. remove from heat and discard bay leaf and thyme sprig before serving hot, garnished with fresh parsley leaves if desired

In a large pot or Dutch oven over medium-high heat, melt the bacon fat or vegetable oil. Add the chicken and duck pieces and cook until browned on all sides. Remove to a plate.

Add the onion and bell pepper to the pot and cook until soft, about 5 minutes. Add the garlic and cook an additional minute. Stir in the rice and cook for 1 minute to coat with the vegetables.

Return the chicken and duck to the pot along with the chicken broth, Worcestershire sauce, smoked paprika, thyme leaves, salt and black pepper. Bring to a boil, then reduce the heat to low, cover and simmer for 30 minutes.
