Ingredients:

1/2 cup uncooked white rice 1/2 cup chopped onion 1/4 teaspoon garlic powder 1/4 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon dried thyme leaves 1/4 teaspoon dried basil leaves 1/8 teaspoon cayenne pepper 2 cups chicken broth 1 skinless, boneless duck breast, cut into 1-inch cubes 1 skinless, boneless chicken breast, cut into 1-inch cubes 3 tablespoons extra-virgin olive oil, divided 1 can (14.5 ounces) diced tomatoes, undrained 3 green onions, thinly sliced 3 tablespoons chopped fresh parsley

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).2. Cook rice according to package directions.3. In a small bowl, combine onion, garlic powder, salt, black pepper, thyme leaves, basil leaves, cayenne pepper and chicken broth; set aside.4. In a Dutch oven or large saucepan over medium heat, heat olive oil until hot. Add duck and chicken cubes; cook until browned on all sides.5. Remove duck and chicken from pan with a slotted spoon; set aside.6. Add onion mixture to pan; cook until tender.7. Return duck and chicken to pan; add tomatoes with juice and green onions.8. Cover and bake in preheated oven for 30 minutes or until the chicken is cooked through.9. Sprinkle with parsley before serving
